The Adhirasam, which is made of rice, jaggery, cardamom spice, and ghee, has a long history dating back to Krishnadevaraya's (1509-1529 CE), when inscriptions confirming its highly skilled manufacture and recipe were discovered. This historic sweet has a wonderful melt-in-the mouth texture and is a delicacy in Tamil Nadu.
